Ripened zacazonapan cheese: a tradition with history

The production of Zacazonapan matured cheese is part of the customs, traditions, and ways of life of the population of Zacazonapan municipality and it is a benchmark for the cultural activity of the region. In addition to the fact that the inhabitants consider cheese as part of their diet, its essence and production have been transmitted from generation to generation, and represent not only a family income, but also a way of life. For this reason, it is important to raise awareness, teach and motivate the new generations so that they value, know, and continue with this tradition.
Additionally, the elaboration of this cheese is an activity that allows foreign people (visitors or tourists) to admire and learn about the gastronomic heritage of the community, which gives rise to the development of agroecological tourism that economically returns to the families of the Zacazonapan.
